Ingredients for two people:
- 180g somen or soba noodles
- 1/2 cup Kimchi cut into pieces
- 1/3 cucumber cut into julienne strips
- 1 hard boiled egg cut in half to serve on top of the noodles
Bibim sauce
- 2 tbsp gochujang sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp brown sugar
- 1 tbsp sesame oil
- 1 tablespoon toasted sesame seeds
Recipe preparation:
Cook the somen noodles in boiling water according to the instructions on the packet. Once cooked, drain well and cool in cold water for about 1 minute, stirring them with your hand to prevent them from clumping. Finally, drain well again and set aside.
Prepare the sauce by combining all the ingredients and mixing them well. In a bowl, put the noodles together with the chopped kimchi cabbage and the sauce. Mix everything together using your hands so that the noodles soak up the sauce.
Serve the noodles together with the boiled egg and cucumber on a plate or in a bowl.
