Recipe for shirataki noodle salad with sweet black sesame dressing

This week we bring you an ideal recipe for hot days, shirataki noodle salad with sweet black sesame dressing. Do you dare? It’s easy, quick and perfect.

Serves two

For the sesame and honey sauce
– 4 tablespoons black sesame seeds
– 2 tablespoons honey
– 4 tablespoons rice vinegar
– 2 tablespoons soy sauce
– 2 teaspoons sesame oil
– Freshly ground black pepper

Toppings:
– 1 large egg
– ¼ teaspoon salt
– ½ tablespoon neutral-flavoured (vegetable) oil
– 1 cucumber
– 1 tomato
– turkey breast

For the noodles:
– 2 packets shirataki noodles
– 4 cups water

Preparation:

For the dressing:

Toast 4 tablespoons of sesame seeds in a frying pan (without oil) until they release their aroma, about 3-5 minutes, depending on the heat. Turn the pan from time to time to move the sesame so that it does not burn.

Transfer the toasted sesame seeds to a Japanese mortar and pestle. Do not grind the sesame seeds completely, as this adds texture to the dressing. If you don’t have a Japanese pestle and mortar, you can use a food processor.

Once ground, transfer to a bowl and add the honey, rice vinegar, soy sauce and sesame oil. Mix well and set aside.

For the toppings:
Beat one egg in a bowl. Add ¼ teaspoon salt and mix well.
Heat the oil in a non-stick frying pan over medium high heat. Once the pan is hot, add the egg mixture. Lower the heat to low and shake the pan to evenly distribute the egg. Once the mixture is distributed in a thin layer over the entire surface of the pan, let the egg cook until it is cooked. Turn off the heat and transfer the omelette to a cutting board.
Roll the egg crepe and cut into thin strips. Set aside.

Peel the cucumber, leaving some strips unpeeled. Cut the cucumber diagonally into 1 cm thick slices. Then cut into long thin strips. Set aside

Cut the tomato in half and cut each half into 3-4 wedges. Set aside.

For the noodles:

Boil 4 cups of water in a pan for the Shirataki noodles. Boiling the noodles removes their somewhat unpleasant smell, so don’t skip this step.

Open the packet of shirataki noodles and drain them. Rinse them quickly in cold water.

Once the water is boiling, add the shirataki noodles and cook for 2 minutes. After this time, immediately drain the shirataki noodles and immerse them in ice water.

When the shirataki noodles are cool, drain well.
To serve, place them in a bowl and add the toppings and sesame dressing.
